Easy Homemade Pasta Dough Recipe with a Pasta Maker
Make Fresh Pasta in Under 30 Minutes
Making fresh pasta at home is simpler than you think — especially when you use a pasta machine. In just a few steps, you’ll create silky, restaurant-quality noodles with a perfect bite. This recipe is great for beginners and makes enough for 4 servings. All you need is a few pantry staples and a little rolling!
Ingredients (Serves 4)
- 1 cup all-purpose flour
- 1 cup semolina or durum wheat flour
- 2 whole eggs, beaten
- 2 egg yolks, beaten
- ½ teaspoon water (add more if needed)
Preparation Steps
- Make the Dough
- In a large bowl or stand mixer, combine both flours. Slowly add the eggs and mix until a crumbly dough forms. Add a splash of water if it’s too dry. Knead by hand for 2–3 minutes until it comes together.
- Let It Rest
- Shape the dough into a disc, wrap in plastic, and chill for 1–2 hours. This helps relax the gluten for easier rolling.
- Roll the Dough
- Dust the dough with flour and flatten slightly. Run it through your pasta machine on the widest setting. Fold and repeat 3–4 times for a smoother texture.
- Thin It Out
- Gradually reduce the roller setting with each pass until you reach your desired thickness (usually level 3 or 4). Lightly flour if it gets sticky.
- Cut the Pasta
- Attach your preferred pasta cutter or slice the sheets by hand. Hang the noodles to dry for 20 minutes.
- Cook & Serve
- Boil water with a generous pinch of salt. Add pasta and cook for 3–6 minutes until al dente. Drain and serve immediately with your favorite sauce.
