Greek Chicken Quesadillas

A Fast & Flavorful Mediterranean Twist

Looking for a quick meal with bold Mediterranean flavor? These Greek-style chicken quesadillas are packed with juicy chicken, tangy feta, herbs, and gooey cheese—all toasted to perfection in minutes.

Ingredients (Makes 4 servings)

  • 150g cooked chicken, chopped
  • 1 roasted red capsicum, skin removed, sliced
  • 2 tbsp sun-dried tomatoes, sliced
  • 1 tbsp fresh oregano, chopped
  • 50g feta cheese, crumbled
  • 1/2 cup grated cheddar
  • 4 Greek-style flatbreads (e.g., yiros bread)

Preparation

  1. Mix the Filling
    • In a bowl, combine the chicken, capsicum, sun-dried tomatoes, oregano, feta, and cheddar.
  2. Assemble & Toast
    • Preheat a sandwich press or grill.
    • Lay 2 flatbreads on a clean surface. Evenly spread the chicken mixture over both.
    • Top with the remaining flatbreads to form quesadillas.
    • Toast in the sandwich press for 2–3 minutes, until the cheese melts and the filling is hot.
    • Cut into quarters and serve warm.
