Butter Poached Garlic Shrimp

Ingredients (Serves 4–6)
- 1 cup (225g) unsalted butter
- 1 cup (240ml) water
- 10–15 garlic cloves, finely chopped
- 2 lbs (900g) frozen shrimp, peeled and deveined
- 1 bunch scallions, chopped
- Salt & black pepper to taste
Preparation
Step 1: Make the garlic butter base
- In a medium-sized pot over medium heat, combine the butter, water, and chopped garlic. Add a pinch of salt and pepper. Simmer until the butter is fully melted and the garlic is fragrant.
Step 2: Poach the shrimp
- Add the shrimp to the pot and cook gently for about 15 minutes, or until they turn pink and opaque. Stir occasionally to ensure even cooking.
Step 3: Finish & serve
- Stir in the chopped scallions and adjust seasoning with extra salt and pepper if needed. Serve immediately over pasta, rice, or with toasted bread for dipping.
